Roasted Potatoes
Ingredients:
Potatoes (duh) - Yukon Gold, Sweet Potatoes, Baby Red Potatoes, or your favorite variety, cut into halves, quarters, wedges or fries, depending on your mood
2 Tablespoons olive oil per pound of potatoes you are preparing
Herbes de Provence, or rosemary, or thyme, or your favorite dried herb blend. But seriously, use herbes de provence.
Garlic powder, kosher salt, and fresh ground black pepper, to taste

Directions:
Preheat air fryer, toaster oven, or convection oven to 425° F. Line a baking sheet with parchment paper or foil.
In a large mixing bowl, drizzle the cut potatoes with olive oil, and add the seasoning. Stir well to evenly coat all the potatoes.
Bake 25 to 45 minutes (depending on the size of your cut potatoes) until outsides are golden brown and the insides are fully cooked.

This is so simple, and it's all technique. I hesitated to include it as a recipe. But if you love hot, crispy potatoes (I mean, you ARE a human, right?) you have to love this quick, simple side dish.
If dieting is not on your calendar (because, uh, potatoes), you can add parmesan cheese to the seasoning mix. Next to covering them in bacon, that's as good as it gets. Bacon? Bacon AND parm? Oh yeah, bacon.
