Turkey Meatloaf
Ingredients:
1 lb. ground turkey
3 slices whole wheat bread, cut in 1/4 inch cubes
2 stalks celery, finely diced
1 jalapeño pepper minced
1/3 cup onion, finely diced
1 egg
1/2 cup ketchup, plus more for decoration
2 Tablespoons Worchestershire Sauce
salt and pepper to taste

Directions:
Combine ingredients in a large mixing bowl. Use your impeccably clean hands to mix everything evenly.
Place mixture in a loaf pan you’ve previously coated with cooking spray. Press the loaf evenly into the pan.
Cover the loaf with ketchup, or make a nice pattern of ketchup crosshatching.
Bake at 350°F for 35-40 minutes or until the internal temperature reaches 165°F.

Notes:
Sometimes simple is best. But if you want to try an Italian variation, add a half-teaspoon each of garlic powder, oregano, basil and thyme, then use a nice chunky marinara sauce instead of ketchup.
Serve with roasted potatoes or rice and plenty of green veggies.
You don't have to use whole wheat bread, but the importance here is that it be relatively fresh. Don't use dried bread crumbs. Yuck.
If jalapeños are too spicy for you, use a green bell pepper instead. I won't judge you. OK, I'll judge you a little bit...
