Grilled Shrimp Tacos
Ingredients:
1 pound shrimp (16-21 size), peeled, de-veined, tails off
4 Tablespoons butter (1/2 stick)
1/2 teaspoon paprika
1/2 teaspoon cumin
1/4 teaspoon garlic powder
1/4 teaspoon chili powder
1/4 teaspoon onion powder
Grated Monterey Jack or other melty cheese of your taste
Sour cream
Roasted Salsa Verde, Mango Salsa, &/or Pico de Gallo
Chopped lettuce or shredded cabbage for serving

Directions:
Preheat your grill.
Put the butter and spices in a microwavable dish and melt the butter with the spices. Stir well to combine when melted.
Use skewers to line up the shrimp for the grill. Brush with the butter mixture, season with salt and pepper.
In a shallow skillet on low heat, place a flour tortilla, add a small amount of cheese and 5-6 shrimp. Cover pan with lid and remove the lid as soon as the cheese starts to melt. Transfer to a plate and add salsa of your choice, and a dollop of sour cream. Garnish with lettuce or cabbage.

Here's a trick for grilling shrimp:
Skewering shrimp is the best way to grill a bunch at once, but they often spin on the skewer when you try to flip them over on the grill. So, use two skewers. Run the first skewer through the line of shrimp near the thicker side of the seafood, and then run another skewer parallel to that first one, snagging closer to the thinner tail end of the shrimp. VoilĂ , the whole thing will turn in place!
Try not to eat until you burst. Just try not to. I dare ya.
