Porcupine Meatballs
South East Asian Style
Ingredients:
1 pound ground turkey (or other ground meat)
1/2 cup uncooked jasmine, basmati, or other long-grain rice
1/2 cup water
1 small onion, chopped
1 jalepeno pepper, minced
1/4 cup chopped cilantro
Juice of 1 lime
2 teaspoons grated fresh garlic
2 teaspoons grated fresh ginger
1 teaspoon garam masala
1/2 teaspoon paprika
1/2 teaspoon ground cumin
1/2 teaspoon turmeric
1/2 teaspoon ground coriander
1 can (14 ounces) tomato sauce
1 can (14 ounces) coconut milk
2 tablespoons maple syrup, honey, or agave nectar
1 teaspoon soy sauce

Directions:
Combine the ground turkey (or other), uncooked rice, water, onion, jalepeno, paprika, coriander, garam masala, turmeric, cumin, cilantro, ginger, and garlic. Add salt and pepper, to taste. Mix well and shape into meatballs. Put the meatballs into a casserole dish that’s been sprayed with nonstick cooking spray.
Mix together the tomato sauce, coconut milk, maple syrup, lime juice, and soy sauce. Pour the sauce over the meatballs. Cover with aluminum foil and bake in a preheated 350-degree F oven for about 35 minutes. Uncover and bake 10 to 15 minutes more.

Notes:
If jalepeno peppers are too spicy for you, use a green bell pepper instead. But what are you doing with your life?
