Plum Sauce
Ingredients:
1 cup water
1 cup granulated sugar
8-10 umeboshi plums
2 Tablespoons rice vinegar
1 cup granulated sugar
8-10 umeboshi plums
2 Tablespoons rice vinegar
Directions:
Place 1 cup water, 1 cup granulated sugar, pickled plums, and 2 tablespoons rice vinegar in a small saucepan. Bring to a boil over high heat, whisking the mixture to combine. Reduce the heat to medium-low and simmer until the liquid thickens and reduces to about 1 cup, 35 to 45 minutes.
Notes:
This will last for months in the fridge in an airtight container.
I get the plums from Amazon because the local grocery stores suck here.
If you want to spice it up, you can add some chopped thai red peppers or dried red pepper flakes to the mix while it simmers.
