Orange Ginger Salmon with Noodles
Ingredients:
Salmon:
1 1/2 pounds salmon
Pinch of salt
1/3 cup Orange Ginger Dressing
1 Tablespoon brown sugar
1 Tablespoon vegetable oil
Noodles:
8 oz rice noodles
3-4 cloves garlic, minced
1/2 cup Orange Ginger Dressing
1/4 cup soy sauce
1/4 cup honey
1/4 cup sesame oil
1 tsp red pepper flakes
1 red bell pepper sliced
1 carrot sliced 1/4 cup green onions chopped
1 1/2 pounds salmon

1 Tablespoon vegetable oil
Noodles:
8 oz rice noodles
3-4 cloves garlic, minced

1/4 cup soy sauce
1/4 cup honey
1/4 cup sesame oil
1 tsp red pepper flakes
1 red bell pepper sliced
1 carrot sliced 1/4 cup green onions chopped
Directions:
Cut the salmon into four fillets. Sprinkle with salt.
In a bowl, combine 1/3 cup of Orange Ginger Dressing with brown sugar and pour onto salmon. Set aside and let it marinade for 15 minutes or while preparing the other items.
Bring water to boil in a pot. Cook rice noodles based on package instructions. Drain water from noodles when done. Set aside.
In a bowl, combine garlic, 1/2 cup Orange Ginger Dressing, soy sauce, honey, sesame oil and red pepper flakes. Whisk to combine. Set aside.
Heat skillet with vegetable oil under medium low heat. Sear salmon skin side up for 1 minute or until golden brown, then flip. Brush leftover marinade onto the top of salmon. Lower heat and cover if needed to cook the insides of the salmon before the outsides browned. Once salmon is cooked (145℉ on a meat thermometer), remove from heat.
Add sauce to noodles and toss, then add sliced red bell pepper, sliced carrots and chopped green onions. Toss again to coat evenly.
Divide noodles into four bowls, and top each bowl with a piece of seared salmon.

Notes:
If the noodles will sit for a while, rinse with cold water so they don't stick together.
I don't generally post a lot of salmon recipes because our favorite way to eat it is grilled with herbs, lime, and olive oil. But when you live on the Monterey Bay, you have a lot of opportunities to go salmon fishing and fill up your freezer. Besides, every now and then we need some great protein that isn't chicken or shrimp.
