Mexican Turkey Meatballs
Ingredients:
1 pound ground turkey
2 slices whole grain bread, processed to make about 3/4 cup
1 14 ounce can diced tomatoes
3 Tablespoons taco seasoning mix

Directions:
Preheat oven to 375°F.
Line a rimmed baking sheet with parchment paper.
Mix all the ingredients thoroughly in a large bowl with your clean hands.
Form into balls about 2 inches in diameter.
Bake for 15-20 minutes until cooked through. Internal temperature should be at least 165°F.

Notes:
Of course you can use ground beef, pork, chicken, or a combination of ground meats instead of the turkey. But why?
Serve with sour cream, guacamole, lime wedges, and chopped cilantro.
