MANGO HABAÑERO AIOLI







Mango Habañero Aioli

Ingredients:

1 cup mango chunks (frozen or fresh)

2 Tablespoons fresh lime juice

1 teaspoon honey or granulated sugar

1 teaspoon smoked paprika

1/2 teaspoon curry powder (garam masala)

1 teaspoon kosher salt

1/4 teaspoon habañero powder

1/2 teaspoon black pepper

1 cup mayonnaise


Directions:

Process mango chunks, lime juice, sugar, smoked paprika, curry powder, salt, habañero powder, and black pepper in a food processor until smooth, about 1 minute.

Stir together mango mixture and mayonnaise in a medium bowl.

Cover and refrigerate until ready to use.


Notes:

If you do use frozen mango, let it thaw before you add it to the food processor. If it’s still frozen it will affect the texture of the aioli.

You can make and store this in an airtight container in the fridge for a week or more before (and after) using.

If you have access to fresh habañeros, chop one up small and blend that in instead of the powder. Modify the quantity to accommodate your desired level of heat.
