Glazed Chicken Meatballs
Ingredients:
For the Glaze:
1/2 cup Thai sweet chili sauce
1/4 cup ketchup
2 Tablespoons rice vinegar
3 Tablespoons Worchestershire sauce
2 teaspoons soy sauce
1 Tablespoon fresh grated ginger
For the Meatballs:
1 lb. ground chicken
2 Tablespoons minced garlic
1 jalepeno pepper, finely chopped
2 Tablespoons finely minced onion
1 egg
1/3 cup panko
1/2 cup Thai sweet chili sauce
1/4 cup ketchup
2 Tablespoons rice vinegar
3 Tablespoons Worchestershire sauce
2 teaspoons soy sauce
1 Tablespoon fresh grated ginger
For the Meatballs:
1 lb. ground chicken
2 Tablespoons minced garlic
1 jalepeno pepper, finely chopped
2 Tablespoons finely minced onion

1/3 cup panko
Directions:
Preheat oven to 375°F.
Prepare a baking dish or sheet pan with parchment paper or foil (if using foil, spray the surface with cooking spray to avoid sticking).
Combine the sauce ingredients in a small saucepan and simmer over low heat until thickened, about 3-4 minutes. Let cool.
Combine the meatball ingredients and about 1/3 of the sauce in a large mixing bowl and use your impeccably clean hands to thoroughly mix. Using a small ice cream scoop, or a pair of spoons, form the chicken mixture into 12 evenly-sized balls. brush with remaining glaze and bake until internal temperature reaches at least 165°F (about 15-20 minutes).

Notes:
Trader Joe's makes the best Thai sweet chili sauce, hands down. If you don't have a store near you, move.
The sauce can be made days ahead and kept in the fridge in an airtight container. It is also a good idea to make multiple batches at once so you can put it on everything. It's that good.
You can use ground turkey instead of ground chicken, or you can make a meatloaf instead of rolling it into balls.
Garnish with a sprinkle of sesame seeds and some cilantro. Serve over rice with lime wedges on the side for squeezing.
