

Ginger Scallion Sauce
Ingredients:
1 cup chopped scallions (from 1 to 2 bunches)
1 tablespoon grated ginger
1 clove garlic, grated
1/4 cup sunflower oil
2 tablespoons rice vinegar
2 teaspoons toasted sesame oil
1 tablespoon low-sodium soy sauce
1 tablespoon grated ginger

1/4 cup sunflower oil
2 tablespoons rice vinegar
2 teaspoons toasted sesame oil
1 tablespoon low-sodium soy sauce
Directions:
Add all of the ingredients into a small bowl and stir to combine. Use a blender or food processor to give it a few pulses until it reaches the desired consistency. Keep refrigerated until ready to use.
Notes:
The sauce can be used as a marinade, pasta salad dressing, and also makes a great dipping sauce for dumplings or egg rolls.
You can use any light vegetable oil, it doesn't have to be sunflower oil.
Use as a marinade for any protein of your choice, such as chicken, shrimp, salmon, steak or even tofu.
