Fish Tacos
Ingredients:
1 - 1.5 lbs cod, tilapia, or other mild fish, cut into 2-3 inch pieces
2 Tablespoons light oil for frying
8 corn tortillas
Cilantro Slaw
Marinade:
Juice of 2 limes
3 Tablespoons olive oil
2 teaspoons chili powder
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/2 teaspoon cayenne

Directions:
Mix the olive oil, lime juice, chili powder, paprika, cumin and cayenne in a large mixing bowl. Add the fish pieces and marinate for 15 minutes.
Cook fish in a skillet in hot oil until fish is cooked through (about 3 minutes per side).
Put a row of fish pieces on a tortilla, cover with a generous portion of slaw or pico de gallo. Eat.

This recipe also works with shrimp!
Serve with lime wedges on the side, and sour cream on top. Both are perfectly optional, but delicious.
