Fennel Slaw
Ingredients:
4 teaspoons light brown sugar
2 Tablespoons white wine vinegar
1 fennel bulb, core removed
1 scallion, finely sliced
1/2 tsp chopped tarragon leaves
1 Tablespoon chopped dill
salt and black pepper

Directions:
In a mixing bowl, whisk together brown sugar, white wine vinegar, tarragon, dill, and salt and pepper to taste. Adjust sugar and vinegar as needed for balance.
Toss with shredded fennel and scallion. Serve immediately.

Use a mandoline or a very sharp knife to thinly slice the fennel bulb.
