Enchilada Sauce
Ingredients:
2 teaspoons chili powder (or more to taste)
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon smoked paprika
1 - 2 teaspoons chipotle pepper sauce
2 cups tomato sauce
1 teaspoon ground cumin

2 cups tomato sauce
Directions:
Heat the olive oil in a saute pan and add the spices. Cook just long enough to bring out the aroma of the spice. Add tomato sauce and pepper sauce, then simmer on low heat for 10 minutes.
Notes:
Keeps in an airtight container in your fridge for up to two weeks.
