Coconut Lime Cilantro Rice
Ingredients:
2 cups jasmine rice
1 can (13.5 oz.) coconut milk
Zest and juice from one lime
1/2 cup chopped cilantro
1/2 teaspoon salt
1 can (13.5 oz.) coconut milk

Directions:
Put the rice, salt, coconut milk, and additional can of water into the instant pot. Set to "rice" and vent steam when cooking cycle is complete. Stir in lime zest, juice, and cilantro. Serve immediately.
Notes:
If you do not have an instant pot (you barbarian), you can make the rice on the stovetop. Increase the liquid to get a 2-to-1 ratio of liquid to rice. Bring to a boil in a medium saucepan, cover, turn down the heat to simmer for 20 minutes or until liquid is absorbed. Stir in lime and cilantro.
